Shez’s Pantry Challenge: Sam’s Chow Mein

Another amazing dish creation in this week’s episode of Shez’s Pantry Challenge. Laura Scherian chooses a range of ingredients from Hot91’s Sam Coward’s pantry and fridge to create ‘Sam’s Chow Mein’

Sam’s Chow Mein

Ingredients

2 Tbsp. olive oil

1 onion, finely diced

1 garlic clove, crushed

500g mince (any will work)

1 Tbsp. curry powder

2 sticks celery, finely sliced

1 carrot, cut into half moons,

1 red capsicum, finely sliced

1 cup broccoli florets

¼ small green cabbage, finely sliced

¼ cup chicken stock

¼ cup kecap manis (or equal parts soy sauce/tamari and honey)

¼ cup oyster sauce

Cooked rice or noodles of your choice to serve

Directions

Heat oil in wok over high heat. Fry onion, garlic and celery until soft.

Add mince and cook until brown, breaking up any lumps with a wooden spoon.

Add curry powder and stir until fragrant.

Next, add carrot, capsicum and broccoli and cook for 2-3 minutes until just starting to soften.

Add cabbage, sauces and stock, cook for about 5 minutes. Serve with rice or noodles.
